What is my life right now?

As I write this, I am researching and writing vegan donut recipes to make at Strong Hearts this weekend.

SERIOUSLY?! Like, seriously?!?!

When I was hired, I spent a long time with my boss talking about the future. What we want to see at Strong Hearts, how we can expand, ways to implement vegan food into Syracuse University student culture and make it more mainstream.

I’ve had a lot of thoughts about this, but one thing has always been at the back of my mind:


If you remember back to my race in San Francisco, Laura and I had one mission for breakfast after the race. We went to Whole Foods and got donuts.

You just can’t find vegan donuts near us in New York. Sure, I could travel to NYC for Dunwell or even Rochester for Red Fern, but logistically it makes more sense to me to have them in Syracuse.

I attempted to make some in my first week there, and failed. I hadn’t tried since.

Well, this Sunday will debut my donuts.

Yeast, fluffy, deliciously vegan donuts.

Seriously what is my life?

I am so happy to be doing this right now. I am happier with my job right now than with anything.

Yup, more than running.

I feel like even if I race horribly, get injured or have bad runs, it’s all still cool. I have a job that makes me happy. I am content. I am able to get creative, problem solve, learn new things and have a good time at my place of employment.

I work for a vegan business that is paying me to create donut recipes.

I’ll take that. I’ll take that everyday.

  1. Go Ellie, go! I am seriously so happy for you. I feel like you’ve really come into your own and found your niche. I hope I can travel to Syracuse some day and have one of your vegan donuts. They look absolutely delicious!

    Seriously I’ve been craving donuts for SO long, but alas there are no gluten-free bakeries near me. Maybe I should start my own? 😉

  3. YES ELLIE YES. This is like what we were talking about. If we can find some place – no matter if its a tiny shack of a business or an office in our own house – that stimulates us and our creativity then we have struck GOLD. That’s all life is about. Finding something that makes us happy and makes us feel needed, creative, productive and allowed to get our voice, or recipes, out into the world. So will you be allowed to share your recipes on the blog? I JUST received the donut pan I ordered in the mail last night so am excitedly trying to decide what to make first. Strong hearts is so lucky to have you!!!
