Cold Brew Coffee and WIAW

Since going off sugar a month or so ago, I have really come to appreciate the flavor of coffee. I always said I liked it, and I did, but I thought it also needed to be sweet. Since getting off fake sugar, I’ve been putting just almond or soy milk in my morning brew. I have developed a new taste for dark brewed coffee, and my latest love, cold brew.

Cold brew coffee is a stronger, more concentrated form of the stuff. It has more caffiene, but is less acidic and has a smoother taste. I am a total decaf person, but the velvety texture of cold brew is really refreshing. The past couple mornings I’ve been switching from my iced decaf to the cold brew and can now say I appreciate good coffee.

I understand why people don’t like Dunkin’ coffee as much. Now, it tastes watery to me. I’ll take my coffee iced, and concentrated.

Something else I’ve wanted to try is nitro brewed coffee. My roommate has it at her work so I’ve been meaning to get over there to give it a go, but have failed to do so. Challenge: accepted.

Although my morning brew does not make an appearance in my WIAW, it is there each morning, iced usually and with milk. I’m linking up with ArmanLaura and Jen for a full day of eats.

Marshmallow Fluff Cookie Butter Banana Ice Cream

Marshmallow fluff pairs nicely with cookie butter in this slightly healthy, but still indulgent banana ice cream recipe. Great for both kids and adults, this recipe is really fun to make and reminiscent of fluffernutter sandwiches. Try it today!

I really love cookie butter. It’s honestly a frosting, but because it’s sold next to peanut butter in most stores, that makes it a breakfast food.

Actually, side not, can I talk about Nutella for a second?

Nutella is frosting. Seriously it’s sugar, milk powder and nuts. It’s frosting.

I’m not hating, but why is it accepted to put it on a sandwich or eat it as a healthy snack, but I get the side eye for doing the same thing with funfetti frosting? I think we need universal standards here!

Ok, so back to cookie butter, the health spread.

I eat banana ice cream every night and love all the different stuff to add. This recipe was created after I visited Trader Joes and realized that the cookie butter sandwich cookies were not vegan. I was sad for a whole three minutes, until I realized that I could just make something similar with stuff at my house.

Ginger snaps, marshmallow fluff and cookie butter were all things I could find vegan. The kicker is the butter extract. It adds that rich enhancement reminiscent of butter cookies. This whole bowl is like a cold cookie butter sandwich, with ice cream and fluff…so it’s better.

Ok, now to do my job as a Barney Butter Ambassador!

BB_Influencers_Header

When I think of almond butter, a certain company always comes to mind. I always see that bright blue labe and brown font that provides an iconic taste. I am, of course, talking about Barney Almond Butter.

A couple months ago, I connected with the Barney Almond Butter company and provided some information about me. I had no idea what their social media team was cooking up, but quite honestly, I was very excited. Imagine if Nike asked for your picture and bio.

Kind of the same thing for me. Y’all know I love my nut butter!

A few days ago, I was offered the chance to be a Barney Butter Ambassador!

BB Ellie Picture

I am beyond thrilled because I love Barney Butter and want to share the ways this company is magical to you all. Small nut butter companies are important to me because of what they represent. Barney Butter is a California based company and uses almonds from right down the street.

All their butters maintain 6 basic promises:

Kosher

Vegan (except for Honey and Flax)

Quality (blanching the almonds eliminates phytic acid)

Non-GMO

Gluten-free

Peanut-free

I am so passionate about Barney Butter simply because it is a nutrient dense, chemical free energy source that fuels my 80-90 mile per week training. I eat a lot of nut butters during training, so quality matters. I can’t constantly put chemicals and fake ingredients into my body because it will eventually affect my running.

Barney Butter takes all the worry away. I feel safe fueling my body with this handcrafted butter.

Now, I know what you’re thinking, this company can’t possibly get better.

Well guys, it does!

Not only do they make smooth and crunchy plain almond butter, they also have a few delicious flavors for the nut butter eater who likes to mix it up.

Vanilla Bean & Espresso
Honey & Flax
Cocoa & Coconut
Raw & Chia
My favorite is probably vanilla espresso. It is a completely new to me flavor and I finished the jar in two days. These flavors are spoon worthy but I also love to put them on waffles and bananas.

Actually, now that I’m thinking about it, my favorite recipe for this almond butter is stuffing it in a date. Serve that at your next party #fancy
